Well, I think the No Noodle Lasagna from last week was a hit with the adults, although I can't say the same for the kids. Brad says that it needs about twice as much mozzarella cheese, and I agree, but otherwise it was much tastier and lasagna-like than I dared to hope. The meat sauce would be great over spaghetti squash too.

Bacon Cheeseburger Quiche (didn't get to it last week)
Skillet Stroganoff (from my new 500 Low-Carb Recipes cookbook by Dana Carpender--love it!)
All-Meat Chili (also from that cookbook)
Tangy Warm Chicken Salad (I'm going to use some canned chicken that I've had hanging around my cabinets for a while.)
